Moroccan tea recipe:

Ingredients (for 4 glasses):

- 1 litre of boiled water

- 2 tsp of green tea (ideally china loose rolled leaves, gunpower style)

- 1 large cup of fresh mint

- 4 to 6 tbsp sugar

Method:

- Add green tea leaves to a small Moroccan teapot and cover with about 400 ml of boiling water.

- Leave to brew for a few minutes.

- Remove the liquid from tea pot (tea spirit) and keep it aside.

- Wash the tea leaves by adding another cup of boiled water to the tea pot. Mix around gently.

- Remove the liquid (don’t keep this one). This process is to clear impurities from the tea.

- Once the mix has become clearer, add the ‘Tea Spirit’ back into the tea pot.

- Add sugar. Cook the tea in the tea pot on medium heat ,until the leaves come to the surface.

- Remove from the heat before adding fresh mint directly into the tea pot.

- Serve into a small glass, from up high.

- Serve and enjoy!
